3 eggs beaten
3/4 C veg oil (I use unsweetened organic apple sauce)
3/4 C buttermilk
2 C sugar (use two 1/4 or 1/2 tsp NSP Stevia)
2 tsp vanilla extract
2 C all purpose flour (I use oat, your choice)
2 tsp ground cinnamon
2tsp baking soda
1/2 tsp salt
1 can 8 oz crushed pineapple, undrained
2 C grated carrots
1 C raisins (I would never ruin a cake with raisins, I add more nuts)
1 C chopped nuts
1 C flaked coconut (don't always have this one personally)
In a mixing bowl combine eggs, oil (apple sauce), buttermilk, sugar
(Stevia) (It is suggested to add the stevia to the dry ingredients) and vanilla and mix
well. Combine flour, cinnamon, baking soda and salt,
stir into egg mixture. Stir in pineapple, carrots, raisins, nuts and
coconut. Pour into a greased and floured 13x9x2 baking pan. Bake at
350 for 30 min. (check with the tooth pick method for doneness) Only
add time if necessary. Do not overbake. Remove to wire rack to cool.
In another mixing bowl make your favorite frosting. This calls for a
cream cheese which tastes wonderful (if you like that sort of thing),
but that would put the calories and sugar into this recipe so I am
leaving the frosting to you. Cake yields 12-16 servings.
